Ingredients 4-5 lbs. boneless cooked (boiled) chicken breasts (broken in eatable pieces) 1 can cream of celery soup 1 can cream of broccoli soup 1 can cream of chicken soup 1 tub (160z.) sour cream STIR & MIX WELL. SPREAD OVER CHICKEN. 1 box of Ritz Crackers 1 stick of your choice of oleo (The more expensive the better) Instructions: Place strips or chunks in 1 or 2 casserole pans sprayed lightly with cooking spray. (9X12X16) Place the soup/sour cream mixture on top of the chicken (like a thick layer). Crumble all the crackers in a bowl (kids job). Stir in 1 stick of melted butter. Layer over soup mixture. Bake @ 350 degrees for 30 minutes on top rack. One pan will feed 4-6 people or even more with if you are having a banquet. This is a holiday meal for us and is a fast throw together if you have all the ingredients available. It will take 12 minutes to prepare as a feast for your main meat dish. It goes very well with our broccoli casserole dish and is very delicious. The original recipe called for a can of cream of mushroom soup, I substituted cream of broccoli soup. I have also seen someone make this dish using stuffing as the top, and peas with the chicken, but my way es delisciosa!!! |
